Risotto with radishes and apples

Risotto is one of my favorite foods. You can prepare it so many ways. I cook rice always the same way but every time I eat different meal. Once you can have pumpkin risotto than you can use radishes and apples and next time you will have mushroom risotto. And that was only examples, you can use your imagination and you will never eat twice the same food (if you don’t want of course).

Some people think it’s hard to prepare risotto. It’s not true. It takes a time but you can play some mobile game or watch your favorite serial while cooking (I usually play Hearthstone). Try it and see.
Risotto with radishes and apples
  1. 30g shallot (2-3 pieces)
  2. 300 g apples (without seeds)
  3. 250 g radishes
  4. 2 Tbsp olive oil
  5. 500 g risotto rice
  6. 2 l vegetable broth
  7. 200 ml pink wine
  8. 250 ml soy cream
  9. 200 g smoked tofu or tempeh
  1. Warm the broth over low heat.
  2. Cut shallots, warm 2-3 Tbsp of olive oil and add shallots. Sauté until slightly translucent. Than add the rice. Sauté for a minute - don't let the rice turn brown. Add wine, cook while stirring until liquid is absorbed. Add a ladle of broth and cook again until liquid is absorbed. Continue adding ladles of broth. You'll see that rice will getting creamy consistency. Repeat this process until rice softens.
  3. If rice is not tender you can use hot water to finish it.
  4. Add salt if needed and add soy cream. Let cook for a minute.
  5. Chop radishes and apples to small pieces. Chop tofu or tempeh too and fry it in a saucepan on olive oil until it's crunchy.
